I’m not sure if anyone else get here but I seem to hit the same point every summer – salad everyday. I don’t even realize it until one day I reflect on all my frequent visits to the grocery store for MORE vegetables. I can barely keep up (but it’s not just me, my kids are good little veggie eaters too 🙂
When it comes to salads for dinner, I usually try to make them a little more hearty. Not so much heavy in the sense of starchy carbs, I’m more into the fats – healthy fats.

I mean who doesn’t like a treat every now and then, especially on a long weekend?! I sure do and my kids are alllll about it, so why not treat yourself?! 🤗
With it being summer, I wanted to make some fudgesicles. I’m not exactly sure why fudgesicles came to mind… I don’t remember ever having them as a child, I’ve never bought them, and I’m not sure I’ve even had one before 🤔 I swear! But, for some reason fudgesicles popped into my mind, and oh did I make some good ones!
For me, there’s nothing like making a healthier, more simple version of something that you would otherwise find processed and packaged up at the grocery store. Yes, it’s easier to pick things up in the store and keep them on hand in the cupboard or freezer – I definitely do sometimes. But I often try to create my take on something when I can. Hey there! Things have been busy – but so great. I just got back from a few days away with my little guys and we had THE BEST time!
We hopped on the ferry, which, for my 4 & 6 year old was a big adventure on its own. We cruised on over to Victoria where we spent time with friends I used to work with at the College. Ahhh, I love reunions like that so much. Though times have changed since there are now 7 kids under the age of 7, so this adds a new kind of crazy. I go in smoothie phases, sometimes I will have a liquid lunch every single day for a few weeks – I get obsessed. And then one day my mood changes and I won’t have another smoothie for weeks, or even a couple of months.
When I’m on a smoothie kick I almost always make some version of a green smoothie. I play around with the ingredients, but I almost always end up throwing in the equivalent of a medium size salad into the blender with all the other ingredients 🙂 I know it doesn’t exactly sound delicious, but with all the other tasty ingredients in there, it works.
