Homemade Fudgesicles

I mean who doesn’t like a treat every now and then, especially on a long weekend?! I sure do and my kids are alllll about it, so why not treat yourself?! 🤗

With it being summer, I wanted to make some fudgesicles. I’m not exactly sure why fudgesicles came to mind…  I don’t remember ever having them as a child, I’ve never bought them, and I’m not sure I’ve even had one before 🤔 I swear! But, for some reason fudgesicles popped into my mind, and oh did I make some good ones!fullsizeoutput_2da

For me, there’s nothing like making a healthier, more simple version of something that you would otherwise find processed and packaged up at the grocery store. Yes, it’s easier to pick things up in the store and keep them on hand in the cupboard or freezer – I definitely do sometimes. But I often try to create my take on something when I can. Read more

Tomato & Bacon Balsamic Salad

Hey there! Things have been busy – but so great.  I just got back from a few days away with my little guys and we had THE BEST time!

We hopped on the ferry, which, for my 4 & 6 year old was a big adventure on its own. We cruised on over to Victoria where we spent time with friends I used to work with at the College. Ahhh, I love reunions like that so much. Though times have changed since there are now 7 kids under the age of 7, so this adds a new kind of crazy. Needless to say there was no time for any deep/focused/heart-to-heart conversations, but it was still so great. Read more

BBQ Grainy Mustard Chicken Salad

I am BBQing everything, well almost everything. I love summer so much just for this very reason – BBQ.  I grill a lot of things, burgers, skewers, chicken, veggies, you name it I’ll do it.

The other day I had some leftover grilled veggies in the fridge that I needed to use up. I’m all for leftovers but sometimes I don’t like eating the exact same thing I had the day before – too boring. Since I had bought a bunch of chicken I planned to BBQ up, I thought I’d somehow throw that all together.
