Easy Egg Cups

A full fridge makes me happy, it makes me feel like I have options.  What makes me even happier is having some go-to items that are ready to eat for snacks and meals at any time of day. This means a little food prep is required a couple times a week. Upfront it’s a little more work but after that it’s just reaching into the fridge to grab what’s already made.

I like these “go-to” food items to be straight forward and easy to prep, I also like healthy and of course, tasty. The last while I’ve been making egg cups, you can reheat them or eat them cold which make them perfect to take on the go.  These things are full of protein, healthy fats, calcium, very low carb and will last up to 3 days in the fridge (you can also freeze them). They take me about 10 minutes to prep, then 20 minutes to bake, and voila!

Turkey Quinoa Meatballs with Roasted Tomatoes & Zucchini Noodles

Food feels like a hobby to me.  I love food, I love thinking about it, admiring it, making it, and especially eating it 🙂  I’m fairly simple when it comes to what I eat, I like healthy, fresh and flavourful, and when I’m cooking, I usually like simple ingredients and simple recipes (if I use a recipe, that is:).

Recipes…. For me, a recipe resembles more of a loose guide.  I’m not sure why, but I’ve never really been into following recipes too closely.  It feels like a hassle sometimes, like I should be more organized and prepared when I cook! Since I use the freestyle method (lol) almost all the time, I find that I can’t tell anyone exactly what I’ve made when I’m asked.  So, in the spirit of being more helpful, this time I switched things up a bit and I measured everything!

Big Green Wrap

Sometimes I like a wrap. It’s quick & easy to make, and you can fill it with almost anything.  A while back I wanted to make a wrap but I wanted to cut back the carbs and eliminate the grains that come with the tortilla.

I started looking about some different options and I then I thought: collard greens. Collard green leaves are perfect because they are enormous, they don’t have a ton of flavor and they are strong, so can hold together a wrap no problem.
