Hey there! Things have been busy – but so great. I just got back from a few days away with my little guys and we had THE BEST time!
We hopped on the ferry, which, for my 4 & 6 year old was a big adventure on its own. We cruised on over to Victoria where we spent time with friends I used to work with at the College. Ahhh, I love reunions like that so much. Though times have changed since there are now 7 kids under the age of 7, so this adds a new kind of crazy. Needless to say there was no time for any deep/focused/heart-to-heart conversations, but it was still so great.
Over the couple days in Victoria we wondered around the beautiful downtown like tourists. We went on a carriage ride, got ice cream, I snuck out and visited with one of my girlfriends again, we went to the Beacon Hill Petting Zoo where Cole found his spirit animal (a baby goat😍). There were probably 50 little goats but he found “the one.” He named her Grettel and followed her around for about an hour telling everyone that it was “his Grettel.” 😆 He beggggged me to take her home, and honestly if I could have I probably would have but I just didn’t feel the best life for little Grettel would be condo living.
We finished off our trip visiting my Aunt and burned off some energy at a skateboard park before heading back to the ferry. It was just so great, every minute of it!
Okkkk, we are home sweet home so it’s time to get back to a little routine. Since we’ve been home the weather continues to be incredible so we have been spending most of our time out and about taking in all the fresh air & sunshine that we can ☀️ ……..then there’s that cooking thing…. When it comes to meal times, at the moment everything I make is super quick & even easier then usual because hanging out in the kitchen, cooking up a storm isn’t my idea of fun times 🚫
The other day I threw together a salad for dinner that was so fresh and fullllll of flavor. I could eat this everyday 😍
This time of year is awesome because fruits and vegetables are in season and taste their best! Since tomatoes were my main ingredient this salad was a total winner.
Honestly, this hardly qualifies as a recipe because you just throw it together and ta-dahhh! In about 5 minutes (minus the time it takes to cook your bacon 🥓) you’ve got your tomato & bacon balsamic salad.
Tomato & Bacon Balsamic Salad
So, here is what you need:
- 4 cups Grape Tomatoes, sliced
- 4-5 slices Crispy Bacon, cut into inch long pieces
- 4-5 Fresh Basil Leaves, chopped
- 2 tbsp Pine Nuts
- 1/4 c Goats Feta Cheese, crumbled
- Balsamic Reduction, drizzle on top
- Bacon 🥓- heat oven to 400 degrees. Place each bacon slice side be side and bake in the oven until crispy (mine took about 30 mins). Remove from oven, let cool, then cut into pieces.
- Place sliced tomatoes in a bowl, add the chopped basil, S&P and toss together.
- Pour into your serving dish and sprinkle over the bacon, pine nuts, feta and then drizzle balsamic reduction over the entire salad.
I hope you try this super easy, super delicious salad. To complete our dinner I BBQ’d some chicken breasts & thighs, roasted some sweet potatoes and there you go!
