Sweet Potato Brownies

Schools out! I’m not sure who’s more excited, my kids or me but it feels SO good having a break from the school routine and hustle of getting out the door on time in the morning.

At the end of the school year the boys class has an end of year celebration, so this means signing up to bring some kind of party food. I try my best (along with many parents!) to come up with healthier options that everyone will still enjoy. Sometimes it’s tricky because the healthy options aren’t always so well received☹️ I’m not sure if everyone feels this way, but it bothers me if I bring something to a party and it just sits there😣 then the end of the party rolls around and you have to pack up what you brought. It’s the party food walk of shame 🙈

For the boys year end party I signed up for a dessert item so I thought I would make brownies🍫 I wanted to try out something new so I went looking for a different brownie recipe, and I found one, a really good one!!🤤

What I like about this recipe was that it’s wheat/gluten free, uses sweet potatoes which makes the brownie nice & moist, it’s really chocolatey, and extremely easy to make!IMG_1388

Sweet Potato Brownies

  • 1 cup    Mashed Sweet Potatoes
  • 2            Eggs
  • 1/2 c      Honey
  • 1/4 c      Coconut Flour
  • 1 tsp      Vanilla
  • 1/3 c      Cocoa Powder
  • 1/4 tsp   Baking Powder
  • 1/4 tsp.  Salt
  • 1/2 c      Chocolate Chips
  • Mini M&Ms to top off the brownies (optional)

Instructions

Preheat oven to 350 degrees. Line mini muffin tins with mini paper cups (you can lightly grease the muffin tins instead of using cups).

Mix the sweet potato, eggs, honey, coconut oil, and vanilla well. Add the coconut flour, cocoa powder, backing powder, salt and mix all together. Then stir in the chocolate chips.   IMG_1393

Fill each muffin cup with the brownie mixture (the brownies do not rise much at all so you can fill them up). Top with a few M&Ms, the bake for 15 minutes or until you can insert a toothpick or knife until it comes out clean.IMG_1399

If you prefer, you can spread into a 9×9″ pan and bake for 15 minutes (or until you can insert a knife and it comes out clean).

Once the brownies have cooled, store them in the refrigerator (or you can freeze them).
