I am BBQing everything, well almost everything. I love summer so much just for this very reason – BBQ. I grill a lot of things, burgers, skewers, chicken, veggies, you name it I’ll do it.
The other day I had some leftover grilled veggies in the fridge that I needed to use up. I’m all for leftovers but sometimes I don’t like eating the exact same thing I had the day before – too boring. Since I had bought a bunch of chicken I planned to BBQ up, I thought I’d somehow throw that all together.
I fired up the BBQ and tossed all the chicken on the grill, there were chicken breasts and thighs, and almost not enough room on the grill for all of it. Here’s the thing, sometimes I like to make a whole bunch of something that’s healthy. That way I’ve made out dinner for the evening and done some food prep for the next few days. Might as well since I’m already making the effort to cook!
Today I thought I would make a BBQ Grainy Mustard Chicken Salad, but this recipe has even more of a twist because I used a bunch of the grilled veg I had prepared the day before. I. Am. Crafty….sometimes 🙂
The chicken salad is so easy to make, and I’m telling you, it’s delicious, flavourful, colourful, and most importantly it’s summer bod friendly.
So without further ado, here is the recipe!
BBQ Grainy Mustard Chicken Salad
- 12 BBQ Chicken Thighs (or 6 thighs & 2-3 chicken breasts), sliced into small pieces
- 2 Celery Stalks, chopped
- 1 large, or 2 small Roasted Peppers, sliced
- 1 Corn on the Cob, remove all corn from the cob
- 1/3 c Red Onion, finely chopped
- 2-3 Radishes, finely chopped
- 1 tbsp Fresh Parsley, finely chopped
I found the cutest radishes that are actually called Easter Egg Radishes. I obviously had to buy them.
Grainy Mustard Dressing
- 1/4 c + 2 tbsp Extra Virgin Olive Oil
- 1/4 c Lime Juice, freshly squeezed
- 2 tbsp Grainy Mustard
- 2 tsp Honey
- 1/4 tsp each Salt & Pepper
Chop all veggies and chicken (cooled) and put into a large bowl, mix all together.
For dressing, measure all ingredients and place in a smaller bowl. Mix together vigorously and then pour over chicken mixture.
Mix well, all chicken, veggies and dressing.
And viola! SO easy and even more delicious. Let me know what you think!
